Balsamic Salad Vinaigrette

3 TBs extra-virgin olive oil
1 TB balsamic vinegar
1 ts Dijon mustard
1 ts maple syrup, honey, or rapadura (otional)
1 clove garlic or little bit of onion (optional too if you don't have it on hand)
salt
pepper
herbs

Just stir it all together and pur it over the lettuce/vegetable when you are ready to serve.
